We used two cups of the lime and cilantro chicken stock to make the tortilla soup on Tuesday and it was phenomenal. I’m a big fan of Mexican food and this soup was just fantastic. I think I put a bit too much onion in it - probably should have only diced two, not three (they were small onions, honest!) - but it was still tasty.
It only took 3.5 hours in the slow cooker and Amber made some great tortilla chips to go with it. All-in-all a delicious meal.
Now, we just need to figure out what to do with the remaining 16 cups of stock…Oh, well, at least we’ve got a freezer big enough to hold it.

Mmm, tortilla soup is one of my FAVORITES! *sigh*
If you and Amber and the kids ever vacation down south, you’ll have to stop by! Zorak ate so many beans and tortillas at work that the Mexican guys made fun of him. They about fell over when they discovered he was married to a white chick. But we eat really well.

We’ll definitely visit if we’re ever in the area. Maybe we should plan a big road trip across the US. We can try to hit various bloggers on our way and physically meet the people who we’ve only known virtually.

LOL! You know, we’ve threatened to have a meetup camp here at the house - you know, one day when it’s no longer an OSHA hazard.
And actually, we have met some truly fantastic folks who stop by on their way through - we usually feed them and play with their children, swap book recommendations and then they’re off. But the door is always open.
